Yep... sometimes you just can't take the Midwest out of a girl. I might have had a couple of adult beverages at brunch the other day before going to Eastern Market to do some shopping for proteins and produce and ended up with some impulse purchases, such as this link of Kielbasa. I decided just to go with a nice ol' sausage and peppers sandwich and hope that this big boy doesn't end up showing up on my hips!
Sausage and Pepper Sandwich
- 1 link Kielbasa
- 1/4 bell pepper, thinly sliced
- 1/4 small red onion, thinly sliced
- handful of homemade pickles
- 2 T. dijon mustard
- 1 hearty sub roll
- blended oil
In a small skillet, heat 1 T. of oil. Cut the sausage in half lengthwise and add it to the pan, turning once it gets a nice brown crust on each side. Add 3/4 c. water to the skillet and let it continue to cook for 8 minutes.
Meanwhile, heat another T. of oil in a separate pot. Add the peppers and onions and season with salt and pepper. Let them soften over medium heat for 7-8 minutes.
Toast the roll if desired. Slather the bun with mustard and fill it with the sausage, peppers, and onions. Top with the pickles and enjoy.
