Perfect nom noms for a Saturday morning! Making them smaller makes me feel less guilty about eating several. If they're miniature, that clearly lessens the calorie count even if you eat the same amount, right?
Mini Blueberry Muffins
- 2 c. flour
- 1 tsp. baking powder
- pinch of salt
- 2 eggs
- 1 stick butter at room temperature
- 1/2 c. Greek yogurt
- 3/4 c. sugar
- 1/4 c. brown sugar
- 1 lemon, zested
- 1 1/2 c. blueberries
Sift together the flour, baking powder and salt in one bowl.
Combine the sugar, brown sugar, lemon zest, Greek yogurt, and butter in a stand mixer or large bowl. Add in the eggs. Slowly mix in the dry ingredients, then fold in the blueberries.
Preheat the oven to 350 degrees.
Scoop the batter into mini muffin pans filled with paper liners. Bake in the oven for 20-25 minutes. Best served warm with butter.
