Sorry for the delay, guys. I had to pack up and get ready for my move to Montana, so things got pushed back and I didn't post every day. Don't worry - I still cooked a lot!
Every once in a while, I make something that I really, really love. This was the perfect relaxing meal that I of course drank with a glass (okay, two) of white wine.
Salmon with Avocado and Radish Salad
- 1 6-8 oz. salmon fillet
- 1/2 avocado, sliced
- 1/2 tsp. honey
- 1 lime, juiced
- 2 radishes, sliced
- 1 T. apple cider vinegar
- 1/2 serrano pepper, sliced
- 2 slices of red onion
- 2 T. of cilantro leaves, picked from the stems
- olive oil
- 1 tsp. cumin
Season the salmon with salt, pepper and the cumin. Heat 1 T. of olive oil in a pan. Add the salmon and cook for 3-4 minutes per side.
While the salmon cooks, slice the avocado and lay it on a plate. Season it with salt and pepper and squeeze half of the lime over it.
In a small bowl, whisk together the remaining lime juice, vinegar and honey. Whisk in 1 T. of olive oil and season with salt and pepper. Toss the radishes, onions, serrano peppers and cilantro in the dressing.
Once the salmon is cooked, lay it on top of the avocado and top with the radish salad.
