I told you I love this time of year because I get to have lazy breakfasts and brunches while my office is closed for the holidays! A strata is simply a layered kind of casserole, most often served at brunch or breakfast.
This is better if you compose the dish and let it sit in the refrigerator overnight, but you can definitely make it the morning you want to serve.
Sausage and Tomato Strata
- 1 thick slice of day-old bread, torn into 1-in pieces
- 2 eggs
- splash of milk
- 1 link spicy or sweet Italian sausage
- 5 cherry tomatoes, halved
- blended oil
Remove the sausage from its casing. Put a very small amount of oil in a skillet and add the sausage. Let it brown, then start breaking it up with a wooden spoon. Once cooked, remove it from the heat.
Whisk together the eggs and milk and season the mixture liberally with salt and pepper. Grease a baking dish with a bit of oil. Mix together the sausage, tomatoes and bread. Put the mixture in the baking dish and pour the egg mixture over the top. Refrigerate overnight.
Preheat the oven to 350 degrees. Bake the strata for 25-30 minutes; until the egg mixture is set.
