Pear and Arugula Pizza

Saturday night is here, and I think it's the perfect night for a pizza and a movie.  Or, I might just fire up some Game of Thrones and find out what all of the hoopla is about.  Did you hear that?  That was me opening up a bottle of wine and settling in for the night.


I apologize there is no picture.  My phone was charging and the batteries in my camera are dead.  Don't you hate that?  When you go to handle a normal household chore and realize - oops! - you have no batteries, light bulbs, you name it?  I might, MIGHT, get around to picking up batteries tomorrow, but I make no promises. 



Pear and Arugula Pizza


- 1/2 pear, sliced

- 1 c. baby arugula

- 2 garlic cloves, minced

- 1/2 c. bleu cheese

- 4 c. bread flour

- 1 tsp. sugar

- 1 package active dry  yeast

- 2 tsp. salt

- olive oil

- pepper

Dissolve the sugar, salt and yeast in 1 c. of warm water.  Let it sit for 15 minutes.

Add the yeast mixture to the flour and mix using the dough hook on a stand mixer or by hand until it forms into a ball.  Turn the dough out onto a floured surface and gently knead into a ball.

Oil a bowl and put the dough inside.  Cover with plastic wrap and let it rest until it doubles in size; approximately one hour.  Divide the dough into two balls.  Cover each one with with a kitchen towel or plastic wrap and let them rest for 10-15 more minutes.

Roll one of the balls out on a floured surface.  Transfer the pizza crust to a baking sheet, or if you have one, a pizza stone.  Bake for 3-4 minutes, then remove from the oven.

Whisk together the garlic with 3-4 T. of olive oil.  Brush it over the crust.  Arrange the pears around the dough and scatter the bleu cheese over the pizza.  Bake for 5-6 minutes.  Remove from the oven and top with the arugula.
