This is my at-home take on pork souvlaki. Pair some marinated and grilled meat with a yogurt-based sauce, and I'm a happy girl. Even better is the fact that it comes on a stick! Certain things are just true for me when it comes to food, and if it comes on a stick, it's just better. Cake? Not that big of a fan. Cake pops? Love them.
Marinated Pork Skewers
- 6-8 oz. pork tenderloin, cut into long, thin strips
- 2 cloves garlic, minced
- 1 lemon, juiced and zested
- 1/2 shallot, minced
- 3 T. olive oil
- 1/4 c. Greek yogurt
- 2 T. grated cucumber
- 2 T. grated carrot
- handful of cilantro and mint, chopped
- 1 T. peppercorns
Put the pork in a plastic bag with half of the lemon juice, zest, one of the garlic cloves, olive oil, peppercorns, and shallot. Add salt and seal, massaging the marinade into the meat. Refrigerate for at least an hour or overnight.
Remove the meat from the marinade and let it come to room temperature. Soak a wooden skewer for each piece in water for a few minutes, then thread one piece of the pork onto each skewer. Meanwhile, heat a grill pan and either rub with oil or spray with non-stick cooking spray. Lay the skewers on the heated grill pan and cook for 2-3 minutes per side.
While the pork cooks, mix together the yogurt, cucumber, carrot, herbs, remaining lemon juice, and garlic. Season with salt and pepper.
Plate the skewers and spoon the yogurt over the top.
