Oh, this little birdie was about to fly south the other day, meaning it was about to fly south... straight into my trash bin. This is the absolute key to cooking at home, especially in small quantities: Utilize everything. Here's a confession for you, as well: I HATE leftovers. Many a styrofoam container has languished in my fridge until it was unrecognizable. So, it was a hard transition to actually utilize leftover ingredients. The key, at least for me? Making it taste completely different.
Sriracha Chicken Salad
- 1/3 c. shredded or chopped chicken
- 2 T. red onion, diced
- 2 T. yellow bell pepper, diced
- 1 tsp. Sriracha hot sauce
- 1 tsp. soy sauce
- 1 T. mayonaisse
- handful of cilantro, chopped
- 4 Bibb lettuce leaves
Mix together the first seven ingredients. Spoon 1/4 of the mixture onto each lettuce leaf and plate.
