The "squared" part of this recipe comes because I'm using serrano ham and serrano peppers. This will come together very easily but is absolutely delicious. There are some roots to pairing a white fish with this particular ham, but I'm not sure what they are. Feels a little Spanish to me, but I could be totally off the mark! Does it matter if it tastes darn good?
Serrano Squared Tilapia
- 1 tilapia fillet
- 2-3 slices of serrano ham
- 1 garlic clove, minced
- 1/2 serrano pepper, thinly sliced
- 1 orange, juiced
- handful of parsley, minced
- olive oil
Season the fish with salt and pepper, going a little easy on the salt. Carefully layer the ham over one side of the fish.
Heat 1 T. of olive oil in a small skillet and add the fish, ham-side down. Cook for 3 minutes on each side. When you flip the fish over, add the orange juice and serrano slices to the skillet. Remove the fish to a serving plate. Add the garlic and parsley to the skillet, adding a little bit more oil if necessary. Cook for 1-2 minutes and spoon the mixture over the fish.
