Yep, fresh horseradish in hummus. It gives it a nice little kick! Serve it up with vegetables, pita or crackers and you're good to go. You can also use the leftovers as the base of an amazing sandwich.
- 1 14.5-oz. can of chickpeas, drained and rinsed
- 2-3 cloves garlic, roughly chopped
- 1 T. tahini
- 2 T. freshly-grated horseradish
- 2 T. olive oil
- dash paprika or cayenne
- veggies, pita or chips for serving
Combine the first five ingredients in a food processor. Pulse to combine. Season with salt and pepper to taste. Continue to puree until desired consistency is achieved - I used some water to make mine smoother instead of dumping in more oil.
Transfer to a serving dish. I like to garnish mine with a drizzle of flavored oil and a dash of cayenne for color. Serve with whatever you like for dipping.
