Avocado and Banana Nut Bread

Whenever you are baking with bananas, keep in mind that the further past the point of no return they are, the better your baked good will come out.  I had a banana that was clearly past its prime as well as an avocado that had seen better days, so I figured why not see if they work together?

Avocado and Banana Nut Bread

Ingredients:

- 1 banana

- 1 avocado

- 2 c. flour

- 1 tsp. baking soda

- 1 tsp. baking powder

- 1 tsp. salt

- 1 egg

- 1/4 c. vegetable oil

- 1/2 c. Greek yogurt

- 3/4 c. sugar

- 1/4 c. chopped walnuts

Preheat the oven to 350 degrees.

Mix together the flour, baking soda, baking powder, and salt.  Set aside.

In another bowl, mix the egg, oil, yogurt, and sugar.  Fold this mixture into the dry ingredients.

Mash together the flesh of the banana and avocado.  Mix this into the batter.  Once thoroughly combined, add in the walnuts.

Spray a loaf pan with non-stick cooking spray and pour the batter in.  Bake in the oven for 45 minutes, or until a toothpick inserted into the middle of the loaf comes out clean.
