Mmmmm... even though red meat is generally something I eat more in the winter months, there's something about a nice grilled steak that is SO summer. Get away from the uber-expensive and too-lean fillets and embrace these cheaper cuts of meat. They cook in minutes and are incredibly tasty.
Skirt Steak with Grilled Scallions
- 6-8 oz. piece of skirt steak
- 1 T. soy sauce
- 1 T. brown sugar
- 1 garlic clove, minced
- 1 tsp. freshly-grated ginger
- 2-3 scallions
- olive oil
- cilantro, torn for garnish
Combine the soy, brown sugar, garlic and ginger. Put the steak in a plastic bag and pour the marinade over the steak. Refrigerate for at least 2 hours and up to overnight.
When you are ready to cook, make sure the steak is at room temperature for at least 30 minutes.
Remove the steak from the marinade and season with salt and pepper.
Coat the grill with oil. Lay the steak on the grill and cook for 3-4 minutes per side for medium rare. Let the steak rest for 8-10 minutes before slicing it against the grain.
While the steak rests, add a little more oil to the grill and lay the onions on the grill, cooking for just 1-2 minutes. Season with salt and pepper.
Slice the steak and plate. Top with the onions and cilantro.
