Cherry Champagne Cocktail

It's the weekend!  What better way to start off your Saturday than with some brunch, which of course means a cocktail or two?


Cherry Champagne Cocktail


- 1/4 c. cherries, pitted

- 1/4 c. sugar

- 1/4 c. water

- champagne

- mint leaves for garnish

Bring the cherries, sugar and water to a bubble in a small pot.  Use a potato masher to break up the cherries.  Once the sugar is dissolved, pour the simple syrup through a very fine-mesh strainer, using the back of a spoon to press down on the cherries.  Let the syrup chill completely, then pour into a champagne flute.  Fill with champagne and garnish with the mint if desired.
