Asian-Style Glazed Meatloaf

You know how some things are better the longer they sit?  Lasagna and all things layered are better the longer the layers have to come together.  Same thing with meatloaf... so much better the day after, so I decided to make two.  One for today and one for leftovers!


Asian-Style Glazed Meatloaf


- 2/3 lb. ground pork

- 2 T. panko bread crumbs

- 1 egg

- 3 T. soy sauce

- 1 scallion, chopped

- 1 tsp. grated ginger

- 1 garlic clove, minced

- handful of cilantro, chopped

- 1 T. brown sugar

- 1 T. Sriracha or other hot sauce

- 1 T. hoisin sauce

- 1 tsp. white pepper

- cooking spray

Preheat the oven to 350 degrees.

Thoroughly combine the pork, bread crumbs, egg, 1 T. soy sauce, scallion, ginger, garlic, cilantro, and white pepper.  Spray two mini-loaf pans with the cooking spray.  Divide the meat mixture between the two pans.  Bake the meatloaves for 30 minutes.

Meanwhile, whisk together the brown sugar, hot sauce, hoisin, and 2 T. soy sauce.  Spread the sauce over the meatloaves.  Return the pans to the oven for another 20 minutes.

Remove the pans from the oven.  Let the meatloaves rest for 2-3 minutes before slicing.  I served it for a light salad.
