Carrot Pancake with Endive Salad

How long does it take for carrots actually to start to go south in your refrigerator?  I have no idea, but I've never had that happen before, so I needed to rescue these guys before they were unusable.

Carrot Pancake with Endive Salad

Ingredients:

- 1-2 carrots, peeled and grated

- 1 small red potato, grated

- 1/2 tsp. cardamom

- 1 tsp. fresh horseradish, grated (prepared can be used)

- 2 T. buttermilk

- 3 T. chopped parsley and cilantro

- 1 head of endive, chopped into half-moons

- olive oil

- salt

- pepper

Mix together the carrots, potato, and cardamom.  Drizzle with olive oil and season with salt and pepper.

In a separate bowl, mix together the horseradish, buttermilk, and herbs.  Season with freshly-ground black pepper.  Add the endive and toss.

Heat a skillet and add 1-2 more T. of olive oil.  Form the carrot mixture into two pancakes and add to the heated oil.  Cook for 2-3 minutes on the first side and 1-2 minutes on the second.  Using a spatula, transfer them to a plate.

Top each pancake with some of the endive and herb salad.
