I'm headed over to a friend's house for some bowl game action today and was tasked with bringing a salad or slaw. Since I know we're dining on some gorgeous, slow-cooked pork shoulder, I figure cole slaw will go perfectly with our pulled pork.
This recipe is enough for 8-12 people.
Football Party Cole Slaw
- 1 head Napa cabbage, cored and thinly sliced
- 6 carrots, peeled and shredded
- 6 slices of cooked bacon, chopped
- 1 c. dried cranberries
- 4 T. red wine vinegar
- 3 T. Dijon mustard
- 1 1/2 c. mayo
- 1 c. Greek yogurt
- 1 T. cayenne pepper
Put the dried cranberries in a bowl and cover them with hot water. Let them plump while you prepare the other ingredients.
Drain the cranberries and combine all ingredients in a large bowl. Stir thoroughly to combine. Feel free to add extra mayo or yogurt if you want a creamier slaw.
