Heirloom Tomato with Broccoli-Wasabi Slaw

I wish today was a lazy day.  Work started bright and early, so I made soem tea and decided to treat myself to a nice breakfast/lunch.  Pretty sure it was lunch based on the hour  Make this salad as a light lunch, or pair it with just about any other brunch item.

Heirloom Tomato with Broccoli-Wasabi Slaw


- 1 heirloom tomato, cut into two thick slices

- 1 carrot, peeled and grated

- ¼ c. chopped broccoli florets

- ½ c. finely chopped cabbage

- 1 T. apple cider vinegar

- 1 T. mayonnaise

- 1 tsp. sugar

- 1 T. wasabi sauce

- Salt

- Pepper

Whisk together the mayo, wasabi sauce and vinegar.  Season with salt and pepper.  Add in the broccoli, carrot and cabbage and toss to coat.

Slice the tomato.  Season each slice with salt.

Plate a slice of tomato and top with ½ of the slaw.  Repeat the process and serve.
