I feel like kale become all the rage in the last couple of years. It's great raw or for folding into soups because it holds up just a little bit better than spinach or other greens. You can sautee it with shallots, garlic and oil like you would spinach, and it will wilt down; it just takes a little bit longer. We're in the new year and I know lots of you are dieting. Have at it with this wonder ingredient!
Raw Kale Caesar
- 2 c. bite-size pieces of kale, rinsed
- 1 egg yolk
- 1 tsp. lemon juice
- 1 tsp. Worstershire sauce
- 1 T. anchovy paste
- 1 T. Dijon mustard
- 1 T. olive oil
- 1 whole egg
In a bowl, whisk together the egg yolk with the oil. Next, whisk in the lemon juice, Worstershire, anchovy paste and mustard. Season with salt and pepper to taste. Be careful with the salt, as the anchovy paste is already salty.
Plate the kale and drizzle the dressing over the kale.
Cook the whole egg to your liking: fried, over easy or poached work very well here. Slide the egg on top of the salad.
Optional additions to this dish would be parmesan cheese or bread crumbs. I just kept it simple with this salad.
