Sweet and Sour Cabbage Soup

I made this to take to lunch at work today, so I apologize in advance if reheating the soup in the office microwave becomes a bit smelly.  I've never tried the Cabbage Soup Diet, nor have I known anyone who has, but I've heard that it makes your house smell like nobody's business.  

Are you guys dieters?  Do you have any restrictions that you'd like to see more recipes accommodate?  Let me know and I'll see what I can do.


Sweet and Sour Cabbage Soup


- ¼ onion, diced

- 1 carrot, peeled and diced

- 1 celery rib, diced

- ½ tsp. caraway seeds

- 2 ½ c. chopped cabbage

- 2 ½ c. chicken or vegetable stock

- 1 ½ T. brown sugar

- 2 T. apple cider vinegar

- 1 T. raisins

- 1/2 roma tomato, diced

- 1 T. diced radish

- Salt

- Pepper

- Blended oil

Heat 1 T. of the oil in a large pot.  Add the onion, carrot and celery.  Season with salt and let them soften for 7-8 minutes.  Stir in the caraway for a minute, then add in the cabbage.  Season aggressively with salt and pepper.  Stir to combine and let the cabbage start to wilt.  After 2-3 minutes add in the stock.  Stir and add in the brown sugar and vinegar.  Let the soup simmer for 30 minutes.

Ladle into a bowl and garnish with the raisins, tomatoes and radish.
