Amaretto Grape Cake

Today seemed like a good day to bake something yummy for my coworkers.  One of them once told me that in another office, the person with my title regularly brings in baked goods to reward the policy people for their work.  Well, I've always done that, but I'll be darned if I get shown up by some boy in another office!

Amaretto Grape Cake


- 1 ½ c. flour

- 1 tsp. salt

- 1 tsp. baking powder

- ½ tsp. baking soda

- ¾ c. sugar

- 6 T. butter, softened

- 3 T. olive oil

- 2 eggs

- 1 orange, zested

- 1 tsp. vanilla extract

- 1 c. Amaretto 

- 1 ½ c. purple grapes

Mix together the flour, baking powder, baking soda and salt in a bowl.

In another bowl or in a stand mixer, blend together the sugar, butter and olive oil.  Add in the eggs, orange zest and vanilla.  Slowly add the flour mixture and then the amaretto.  

Lightly grease a 10-in. ring-mold pan with olive oil.  Pour in the batter and scatter the grapes over the top.

Bake for 25-30 minutes; until a toothpick inserted in the center comes out clean.  Cool completely.
