I am so tired today. Just spent. You know the feeling? When you're just bone-tired? Normally, I would encourage you to take off a day from the kitchen, but if you're like me, pouring a glass of wine and losing yourself in the kitchen can actually help. Today was one of those days.
Marinated Salmon Skewers and Grilled Scallions
- 1 salmon fillet, cut into 1-in. pieces
- 6 medium shrimp, peeled and deveined
- 1 ½ T. soy sauce
- 1 T. Mirin
- 1 T. sugar
- 1 tsp. Sriracha hot sauce
- 4 scallions
- 1 T. sesame seeds for garnish
- Peanut oil
Whisk together the soy, Mirin, sugar and Sriracha. Put the salmon pieces and shrimp in a plastic bag and pour the sauce over the salmon. Close the bag and massage the marinade into the seafood. Refrigerate overnight.
Soak wooden skewers in cold water. Put the salmon pieces and shrimp on the skewers. Reserve the marinade.
Heat a grill pan and drizzle the oil over the pan. Add the salmon skewers and cook for 1-2 minutes per side. Lay the scallions on the grill and cook for 1-2 minutes on each side to get a nice char. Brush the salmon and scallions with the reserved marinade as they grill.
Plate the scallions and salmon and garnish with the sesame seeds.
