I think I mentioned I'm on this tapas kick, right? Make this along with a few other bites or as a side. You're packing lots of protein with the chickpeas, so you can make your whole dinner vegetarian if you want.
Chickpeas in Onion Sauce
Serves: 1 Time: 30 minutes Difficulty: Not at all!
- 1/4 c. chickpeas
- 1/2 onion, sliced
- 1 bay leaf
- 1 garlic clove, smashed
- 4 cherry tomatoes, peeled and minced or 1/4 c. diced tomatoes from a can
- 1/2 c. stock
- salt, pepper, oil
- chives, chopped for garnish
Heat 1 T. of oil in a pan.
Add the onion, season with salt, and let it slowly carmelize over low heat; approximately 15 minutes.
Add the garlic, stir, then add in the chickpeas, bay leaf, tomatoes, and finally, the stock. Season with salt and pepper again. Simmer for another 15 minutes.
Discard the bay leaf and garlic. Plate and garnish with the chives.
