Mushroom Miso Soup

This is about as easy as it gets!  Once you realize how easy miso soup is to make, you'll never spend $5 on it again.  Of course, you can make a heartier stock, letting it simmer for a long time, but this basic version will come together in minutes.

Mushroom Miso Soup

Serves: 1    Time: 15 minutes    Difficulty: Could it BE any easier?


- 1/3 c. mushrooms, sliced

- 1 1/4 c. vegetable stock (you can use chicken or seafood if you prefer)

- 1 T. miso

- 1 tsp. soy sauce 

- Sriracha (optional)

- oil


Bring the stock and soy to a simmer.  Stir in the miso.

In a separate pan, heat 1/2 T. of oil and add the mushrooms.  Let the start to brown and carmelize; 3-4 minutes.

Add the mushrooms to the soup and simmer for 6-7 minutes.  Ladle into a bowl and serve, dotting with Sriracha if you choose to do so.
