Don't ask me why, in the dead of winter, some good-looking cherries popped up in my grocery store. Sometimes I just don't trust produce that is completely out of season, but these were really tasty. Yes... I was that girl, tasting one of the cherries before I put them in my cart. If you don't have a freakish arrival of out-of-season produce, save this one for the summer months.
Cherry Sriracha Gazpacho
- 1 small cucumber, peeled, seeds removed and roughly chopped
- 1 T. Sriracha or other hot sauce
- 1/6 onion, roughly diced
- ¾ c. pitted cherries
- 1 lime, juiced
- 1 T. olive oil
Place all ingredients in a blender and puree. Season with salt and pepper to taste. Add a little bit of water if it is too thick. Transfer to the refrigerator and chill completely.
