Salmon and Green Veggies

Gotta get your green veggies in, right?  I mean, not every single one of us has the time to go through the painstaking process of making green juices and the like.  But, they are really healthy and do great things for you!

Salmon and Green Veggies

Ingredients:

- 1 6-8-oz. salmon fillet

- 1/2 c. broccoli florets

- 1/2 c. asparagus pieces

- 1/4 c. peas (frozen are fine)

- 1 T. grainy mustard

- 1/2 c. dry white wine

- 3 chives, chopped

- 1/2 lemon, juiced

- 1 sun-dried tomato, chopped

- oil

- salt

- pepper

Bring a large pot of water to a boil.  Salt it liberally and add the broccoli and asparagus.  Cook them for 1-2 minutes, then transfer them to a bowl of ice water.  

Heat 1 T. of oil in a small skillet.  Season the salmon with salt and pepper and add it to the pan.  Cook for 2-3 minutes per side.  Remove the salmon and plate it.

Add the wine to the pan and let it reduce for 2-3 minutes.  While it reduces, heat another T. of oil in another pan.  Add the asparagus and broccoli and let them sautee while you make the sauce.

Whisk the mustard into the wine.  Add the peas and let the sauce simmer for 2-3 minutes.  Squeeze in the lemon juice.

Plate the veggies next to the salmon.  Pour the sauce over the fish.  Garnish with the chives and sun-dried tomatoes.
