Make a light lunch, whether to take to work, or while you're scrambling to get things done on the weekend. I promise, that little boost of healthy eating will give you energy and a better outlook on this whole season.
Arugula and White Bean Salad
Serves: 1 Time: 20 minutes, max! Get back to the holidays Difficulty: Doesn't get easier
- 1-2 c. arugula
- 1 pear, sliced
- 1/4 c. sliced onion
- 1/4 c. white beans, drained and rinsed
- 2 radishes, sliced
- 2-in. piece of cucumber, cut into bite-size pieces
- 1 T. sliced almonds
- 1/2 grapefruit, juiced
- 1 tsp. agave or honey
- olive oil
Whisk together the grapefruit juice and agave. Whisk in 1 T. of olive oil and season with salt and pepper. Drizzle 2/3 of it around the edge of a bowl with the arugula in it, toss to coat, and plate the arugula.
Arrange the pear, onion, beans, cucumber on the arugula. Drizzle with the remaining vinaigrette and top with the radishes and almonds.
