Smoked Salmon Nicoise Wrap

I love nicoise salads.  Love, love.  And, I firmly believe that everything tastes better in a tortilla.  This is continuing my trend of finding interesting things to bring to the office to eat outside of the same old boring salads, although that is a go-to trick of mine.  I'll pick up a bunch of salad ingredients - veggies, fruit, beans - when I shop, then chop them all up so all I have to do when I make a salad is throw everything together in one container.

Smoked Salmon Nicoise Wrap

Ingredients:

- 1 whole wheat tortilla

- 2 oz. smoked salmon

- 1 hard-boiled egg, sliced

- 4 green beans, blanched

- 1-2 cherry tomatoes, sliced

- 4 kalamata olives, sliced

- 1/4 c. arugula or greens

- 1 T. Dijon mustard

- 1 tsp. balsamic vinegar

- 1 T. chopped dill

- salt

- pepper

Lay the tortilla flat.  Spread the tortilla with the mustard.  Layer on the dill, salmon, sliced egg, beans, tomatoes, and olives.  Toss the greens in the vinegar and place them on top.  You can see below where the ingredients should be placed to make rolling easier:
