I'm always thrilled to spend an evening with my lovely Aussie friends, cooking and then eating up a storm. They were traveling and were craving a laksa - essentially a Southeast Asian fish stew in a coconut milk-based broth. For once, I was primarily off the hook! They made an amazing version of the stew (which of course I'll have to try and recreate), and I was just tasked with bringing along a refreshing salad to complement it.
Anytime you have something hot, spicy and a little heavy, having something to lighten it up is a good thing!
Asian Style Pear Salad
- 1 red bell pepper, seeds and ribs removed, cut into long strips
- 2 pears, peeled, cored, and cut into long strips
- 1/4 red onion, sliced
- 1 jalapeno, sliced (remove ribs and seeds for less heat)
- 1/2 c. cilantro and mint, chopped
- 1 T. black sesame seeds
- 1 T. agave nectar
- 2 T. rice wine vinegar
- 1 lime, juiced
- 2 T. grapeseed oil
- drizzle of sesame oil
- white pepper
Whisk together the agave, vinegar, lime juice, and both oils. Season with salt and white pepper. Set aside.
Combine the peppers, pears, onions, and jalapeno. Toss with the dressing. Stir in the herbs and garnish with the sesame seeds.
