Bacon-wrapped Peppadew Peppers

You know how we've been good all month long?  This is exactly why!  The holidays are just filled with delicious bites, and these couldn't be easier if you're entertaining.  Depending on if appetizers are the only fare or you're planning dinner somewhere, plan for 2-3 peppers per person.

If your gathering is this weekend, you can definitely prepare these and just bake them when you're ready to serve.

Bacon-wrapped Peppadew Peppers

Serves: A crowd     Time: 30 minutes     Difficulty: Easy entertaining

INGREDIENTS: (per pepper; recommend 2-3 per person)

- 1 peppadew pepper (piquillo peppers would also work)

- 1 oz. mild bleu cheese

- 1/2 strip bacon


Preheat the oven to 400 degrees.  Stuff the peppers with bleu cheese.  Lay out a piece of bacon and place the pepper at one end.  Roll it up and place it on a baking sheet seam-side down.  Bake in the oven for 15-20 minutes, or until the bacon is crispy.  Remove them to a paper towel to drain some of the fat and then serve.
