Well, hello, Birthday Month! Yes... you read correctly. Now, despite what some friends accuse me of, I believe in celebrating your entire month. Why, you ask? As we get older, it is harder and harder to get together a group of people on any given one day. So, I say that whenever you want to celebrate with me, I'm in! No, that does not mean I expect you to show up to everything - just that the one time you want to raise a glass to me getting older and wiser is just fine by me.
This is an easy dish that takes only minutes to prepare, but oh my goodness... the sauce had me wishing I had about three more portions.
- 1 piece swai (any other white fish will do such as halibut, cod, or even tilapia)
- 1 T. anchovy paste
- 2 cloves garlic, minced
- 4 pearl onions, peeled and halved if necessary
- 4 cherry tomatoes, halved
- olive oil
- 3 basil leaves, thinly sliced for garnish
- 1 T. lemon juice (1/4-1/2 of a lemon)
Preheat the oven to 350 degrees.
Heat 1-2 T. of olive oil in a pan. Add the anchovy paste and stir until it dissolves. Add in the garlic and stir another minute. Season the swai with pepper and a hint of salt. Add the tomatoes and onions to the pan and roast in the oven for 20 minutes.
Remove the pan and plate the fish and vegetables. Garnish with the basil and lemon juice.
