Do you ever get home from work and you're utterly starving? Like, the kind of hungry where you shouldn't go to the grocery store because you will have zero self control? That was me tonight, so I decided to make this salad the second I got home to stave off hunger and see what else I was hungry for later on in the evening.
Snow Pea and Avocado Salad
Serves: 1 Prep Time: 20 minutes or less Difficulty: Easy Peasy
- 1/2 avocado, sliced
- 3-4 slices onion
- 1/4 jalapeno, seeds and ribs removed and thinly sliced
- 3 grapes, sliced
- 5 snow peas, cut on the bias (or diagonal)
- 1 T. white sesame seeds for garnish
- 1 T. soy
- 1 tsp. Mirin
- 1 tsp. honey or agave
- 1 tsp. rice wine vinegar
- 1 T. oil
Whisk together the last five ingredients. Arrange the avocado slices on a plate and top them with the snow peas, onions, grapes, and jalapeno slices, like so:
Pour the vinaigrette over the salad and garnish with the sesame seeds.
