Avocado with Spicy Grapefruit Sauce

Here we are, being all healthy!  With the good fat in the avocado, this is a meal and/or snack that will fill you up for a little while.  As a friend pointed out (yes, a boy who outweighs and this outeats me), he sometimes needs to make one of my recipes and still come up with a side.  Fair enough.

Make this as a side, but I say it's a great breakfast to get you going, especially on the weekend.  Try it and get away from the traditional American bacon and eggs that leaves you lethargic... or just have that only once in a while when you're ready for a morning or afternoon of movies or games on TV.

Avocado with Spicy Grapefruit Sauce

Serves: 1     Time: 15 minutes or so     Difficulty: Easy - no cooking!


- 1/4 small onion, finely diced

- 1 garlic clove, finely grated or minced

- 1 T. grated fresh ginger

-  1 1/2 T. agave syrup or honey

- 1 T. Sambal Olek or hot chili paste

- 1 T. tomato paste

- 1 grapefruit

- 1/4 c. chopped cilantro

- 1 tsp. ground cumin

- 1 tsp. olive oil

- salt


Gather your ingredients.

Put the onion in a dish with the garlic.  Season with salt and zest the grapefruit on top.

Next, "supreme" the grapefruit.  This means you cut off both ends, creating a flat bottom of top, and cut away all of the peel and pith - the white stuff underneath the peel.  Hold the grapefruit in one hand over the onion bowl.

Cut the grapefruit segments out by cutting on each side of the membrane and set them aside, working around the fruit one segment at a time.  Squeeze all of the juice out of the remaining flesh and membranes into the onion bowl.

In another bowl, whisk together the agave, tomato paste, chili paste, cumin, and olive oil.

Cut the avocado in half around the pit, then slice your half into dice inside the skin to make it easier to eat.  You don't have to do this if you don't want, and I recommend doing it with the avocado on a cutting board.  If you do it with the avocado in your hand, it's very easy to cut through the avocado skin and into your flesh.  No bueno.

Season the avocado half with salt.

Mix together the onion mixture and chili mixture.  

Dice the pieces of grapefruit and cilantro and add them to the mix.  Spoon it into the grapefruit.
