I liked the cauliflower I roasted a little while ago that I decided it was time for another take on it. The beauty of roasting vegetables in the winter is that it helps heighten their flavors, and if you want to go the extra step, you can roast a full head of cauliflower and use half of it as a mash or soup.
Chipotle Roasted Cauliflower
Serves: 1 Time: 1 hour Difficulty: Easy as pie
- 1/2 head of cauliflower, cut into bite-size pieces
- 2 T. pureed chipotle in adobo
- 1 T. olive oil
- cilantro, torn for garnish
Heat the oven to 400 degrees.
Mix together the oil and chipotle in adobo.
Toss the cauliflower in the chipotle mixture. Season it with salt and pepper and scatter the pieces on a baking sheet.
Roast the cauliflower for 45-55 minutes. Plate and garnish.
