I was in a lettuce wrap kind of mood tonight, but I also wanted to sit on my couch and watch TV while I ate, so something less messy and drippy than lettuce wraps seemed a better route. So, I made a veggie medley that normally I would put inside a lettuce wrap and just plated it all together. Satisfied my craving and kept dipping sauce from dripping down my shirt and all over my couch.
Lettuce Wrap Salad
- 4 Bibb lettuce leaves
- 5 Brussels sprouts, thinly sliced
- 1/4 red onion, sliced
- 1 ear of corn, kernels removed
- 1 fresno chili, sliced
- 5 cherry tomatoes, halved
- 1 scallion, chopped
- 1 T. sesame seeds
- white pepper
- 1 T. soy sauce
- blended oil
- a few drops of fish sauce
- 1 tsp. ponzu
- 1 tsp. sambal olek
- a few drops of sesame oil
Lay the lettuce leaves on a plate.
Whisk together the soy, fish sauce, ponzu, hot sauce, and sesame oil in a small bowl. Set aside.
Heat 1 T. of blended oil in a pan. Add the onion, fresno, and corn. Season with salt and saute for 3-4 minutes. Next add in the Brussels sprouts and sautee for 2 more minutes, then finish by adding in the tomatoes and seasoning everything with pepper. Pour the reserved sauce over the pan and cook for 1-2 minutes.
Spoon the mixture onto the lettuce leaves and garnish with the scallions and sesame seeds.
