I was really inspired to bring things that aren't just the same old, same old salads and sandwiches to work each day. This one reminded me a little bit of my childhood because the citrus lightly pickles the cucumbers, reminding me of the pickles my godmother and great aunt Cyrilla used to make.
Cucumber and Avocado Salad
- 2 mini cucumbers, sliced
- 1/2 avocado, diced
- 1/4 roasted bell pepper, sliced
- 1 1/2 dill, chopped
- 1 lemon, zested and juiced
- 1 tsp. champagne vinegar
- 1 T. olive oil
Whisk together the lemon zest, juice, and vinegar. Slowly whisk in the oil, season with salt and pepper, and stir in the dill.
Plate the cucumbers with the avocado mounded on top. Top with the red pepper slices and drizzle the vinaigrette over the salad.
