Happy Birthday to my wonderful mom!! In her honor, I'm making a dish using avocado and a flaky white fish - both things she loves. Now, she probably wouldn't love the jalapeno or cilantro, but it's the thought that counts, right?
Oven-Roasted Fish with Mango-Avocado Salsa
Serves: 1 Time: 20 minutes Difficulty: Easy Peasy
- 1 piece of flaky white fish, such as swai, tilapia, halibut, or orange roughy
- 1/4 c. diced mango
- 1/4 c. red onion, diced
- 1/2 jalapeno, seeds and ribs removed, finely diced
- 1/8 avocado, diced
- handful of cilantro, chopped
- 1 lime, juiced
- a few dashes of hot sauce
- a splash of stock (optional)
Preheat the oven to 350 degrees.
Put the fish in an oven-safe dish or in parchment paper. Season with salt and pepper. Add the stock, if using, to keep the fish incredibly moist. Bake for 20 minutes.
Meanwhile, put the avocado in a small bowl. Immediately add the lime juice to stop the avocado from browning. Hold on - the avocado was so gorgeous, I just had to show you:
Add the mango, onion, jalapeno, cilantro, and hot sauce. Stir to combine and season with salt and pepper.
Plate the fish and top with the salsa.
