Spinach Stuffed Artichoke

Serves: 1-2     Time: 40 min.


- 1 artichoke, cut in half from top to bottom

- 2/3 c. frozen spinach

- 1/4 c. cream cheese, softened

- tsp. onion powder

- tsp. garlic powder

- tsp. dried parsley

- pinch crushed red pepper flakes

- 1/4 c. parmesan

- 1 lemon, halved

- salt, pepper


Heat a pot of water to boiling. Add the lemon halves, squeezing as you drop them in. Add the artichoke halves, salt, and pepper. Cover and simmer for 20-25 minutes.

Meanwhile, microwave the spinach with a small bit of water for eight minutes. Completely drain any excess water from the spinach.

Combine the spinach, cream cheese, onion powder, garlic powder, parsley, and red pepper flakes. Season with salt and pepper to taste.

Remove the artichoke from the water. Spoon out the hairy looking middle part, or "choke," and discard.

Heat the oven to 375 degrees.

Place the artichoke halves on a baking pan. Spoon the spinach mixture into the center of the artichoke. Top each half with cheese and broil until the cheese browns and bubbles; approximately 10 minutes.

Plate and serve.
