Pasta Primavera

Serves: 1      Time: 20 minutes

INGREDIENTS:

- 1/4 thing spaghetti

- 6 cherry tomatoes

- 1/3 c. broccoli florets

- 1/4 c. sliced mushrooms

- 1/4 c. sliced zucchini

- 1/4 small onion, sliced

- 1/2 T. capers

- 1 garlic clove, minced

- pinch red pepper

- splash white wine

- 3 T. grated parmesan

- salt, olive oil

DIRECTIONS:

Bring a pot of water to a boil. Salt liberally. Add the broccoli and cook for one minute, then transfer to a bowl of ice water.

Bring the water and add the pasta, cooking for two minutes less than recommended.

Heat 1 T. of oil in a skillet. Add the mushrooms and let them cook for 4-5 minutes. Add the onion, season with salt and pepper, and cook for two minutes longer before stirring in the zucchini, tomatoes, garlic, capers, and red pepper. Add the white wine and let it reduce by half.

Add the pasta to the pan along with a ladle of cooking liquid. Turn off the heat and stir to combine. Plate the pasta and top with the cheese.
