Shrimp Cakes

Serves: 1     Time: 30 minutes


- 1 c. bay shrimp

- 2 T. cream cheese

- 1 egg white

- 1 t. paprika

- 1/2 c. parsley

- 1 scallion, chopped

- 1/2 c. bread crumbs

- 1 T. maple syrup

- 1 T. grainy mustard

- 1 T. apple cider vinegar

- 1/2 c. micro greens

- 1/4 lemon

- salt, pepper, oil


Mix together the mustard, syrup, and vinegar. Season with salt and set aside.

Combine half of the shrimp, parsley, and scallion in a food processor. Pulse to combine.

Pour the mixture into a bowl with the remaining shrimp, cream cheese, and egg. Season with salt and pepper and mix throughly. Add in enough bread crumbs to pull the mixture together - you may not use all of them.

Form into two patties.

Heat 1 T. of oil in a non-stick pan. Cook the cakes in the oil until golden brown; approximately three minutes per side.

Plate the shrimp cakes and top with the greens. Spoon the sauce over the top and around the plate. Finish with the lemon juice.
