Serves: 1 Time: 40 min. plus 20 min.
- 1/4. tsp each of garlic powder, cumin, black pepper, paprika, salt, and cayenne
- 2 sprigs each fresh oregano and cilantro
- 1 garlic clove, crushed
- 2 chicken tenders
- 3/4 c. sliced zucchini
- 2 weges lemon
- oil, salt, pepper
Mix together the fresh herbs, garlic, and 1/4 c. oil in a plastic bag. Add the chicken and marinade for 40 minutes.
Remove the chicken and discard the marinade. Season it liberally with the spice blend.
Heat a light layer of oil in a pan. Add the chicken and cook for 3-4 minutes per side.
Once you flip the chicken, scatter the zucchini around the pan and season with salt and pepper.
Plate the chicken and zucchini and squeeze the lemon over the top.
