Salmon with Salsa Verde
Serves: 1 Time: 30 minutes tops Difficulty: Looks fancy for easy as pie, doesn't it?
- 1 salmon steak
- 1 tsp. capers, chopped
- small handful of parsley, chopped
- 1 tsp. Dijon mustard
- 1 tsp. grainy mustard
- 1 tsp. vinegar
- 2 T. extra virgin olive oil
- pinch crushed red pepper flakes (optional)
- salt, pepper
Preheat the oven to 425 degrees.
Heat 1 T. of oil in an oven-safe pan. Season the salmon on both sides with salt and pepper. Add the salmon to the pan, searing on each side for 1 1/2 minutes. Transfer the pan to the oven and cook for 8-10 minutes.
Mix together the capers, parsley, Dijon and grainy mustards, vinegar, and red pepper (if using). Slowly whisk in 1 T. of oil and season with pepper.
Plate the salmon and spoon the sauce over the top.
