Whole Roasted Snapper

Don't let the sight of a whole fish scare you! Your fish monger will gut and clean the fish for you. What you are looking for is for clear eyes - and touch them lightly. They should feel firm. Look at the gills -  they should be red. Finally, if it smells incredibly fishy, don't do it. Fresh fish smells like the ocean.

Whole Roasted Snapper

Serves: 2-3     Time: 45 minutes      Difficulty: Okay, it's a little intimidating

INGREDIENTS:

- 1/3 c. cilantro, chopped

- 1/3 c. parsley, chopped

- 1 lemon, sliced

- 1 1/2 tsp. harissa paste

- 1 1/2 T. olive oil

- 1 whole snapper

- salt

DIRECTIONS:

Preheat the oven to 425 degrees.

Season the fish inside and out with salt.

Mix together the herbs, harissa and olive oil. Rub it liberally inside and outside of the fish. Stuff the cavity with the lemon slices.

Roast in the oven for 30 minutes. Plate and serve!
