Jerk Salmon

No, the salmon isn't a jerk... jerk seasoning is used in the islands to flavor fish and chicken. You can use whatever kind of chili pepper you want depending on your tolerance for heat. I used a combination of habanero and serrano, because I like it spicy! A jalapeño would work just fine, though.

Jerk Salmon

Serves: 1     Time: 30 minutes     Difficulty: Moderate

INGREDIENTS:

- 1 salmon filet

- 1 T. molasses

- 2 T. fresh thyme, leaves stripped and chopped

- 1 clove garlic, minced

- 1 T. of grated chili pepper

- 1/2 lemon, juiced

- oil, salt, pepper

- a handful of baby greens

Serving suggestion - cauliflower puree

- 1 c. cauliflower florets

- 1/2 c. stock

- 1 T. cream cheese or marscapone

- salt, pepper

DIRECTIONS:

Preheat the oven to 350 degrees.

Season the salmon with salt and pepper and lay it in a baking dish.

Combine the molasses, thyme, garlic, chili, and lemon juice.

Pour over the salmon and roast in the oven for 18-20 minutes.

While the salmon cooks, bring the cauliflower and stock to a simmer. Season with salt and pepper. After 10 minutes - once the cauliflower is fork-tender - puree the mixture. Stir in the cream cheese.

Plate the cauliflower topped by the salmon and baby greens.
