Kale and Snap Pea Salad

I had every intention of making this as a group salad for a bbq... until I realized there was no way my crew of people was going to eat a healthy salad when there was slow-cooked meat of every variety. So, all the more for me!

Kale and Snap Pea Salad

Serves: 1     Time: 15 minutes      Difficulty: Easy

INGREDIENTS:

- 2 c. baby kale

- a few shavings of parmiagiano reggiano

- 6 snap peas, sliced diagonally

- 2 T. sliced almonds

- 1 tsp. strawberry jelly or preserves

- 1/2 tsp. grated serrano pepper

- 1 tsp. red wine vinegar

- 1 T. olive oil

- salt, pepper

DIRECTIONS:

Assemble the salad.

Whisk together the jelly, vinegar, and serrano. Slowly whisk in the olive oil. Season with salt and pepper and drizzle over the salad.
