Remember the salsa verde we made the other day when we made Green Chicken Chili? Here is a chance to use it up. If you didn't make it, use your favorite salsa or whip up a quick batch.
Serves: 1 Time: 20 minutes Difficulty: Easy
- 1 portion halibut
- 2 c. greens
- 1 garlic clove, minced
- 1 tsp. coriander seeds
- 1 tsp. peppercorns
- oil, salt, pepper
- 1/4 c. salsa verde
Toast the peppercorns and seeds in a dry skillet until fragrant. Grind in a mortar and pestle or using a spice mill.
Season the halibut with salt and crust the top with the spice mixture.
Heat 1 T. of oil in a large pan. Add the halibut, crust side down, and cook for 4 minutes. Turn it over and cook another 8 minutes.
Meanwhile, heat a light layer of olive oil in another pan. Add the garlic, stir for a minute, then add in the greens. Season with salt and pepper and stir to coat. Sauté until the greens are slightly wilted, then plate them and the fish. Spoon the salsa over the fish.
