Curried Lamb Meatballs and Calamari

Serves: 1     Time: 35 minutes


- 1/4 lb. ground lamb

- 1 tsp. coriander

- 1 tsp. cumin

- 1/4 c. bread crumbs

- 1/4 c. chopped cilantro

- 2 tsp. Worstershire

- 1 garlic clove, minced

- 1/2 egg, whisked

- handful of calamari rings

- 1 T. curry powder

- 1 T. fresh ginger

- 3/4 c. stock

- 1/4 c. finely chopped kale, woody stems removed

- salt, pepper, oil


Preheat oven to 350 degrees.

Combine the first eight ingredients together and use your hands to combine. Season with salt and pepper and roll into small meatballs.

Heat a layer of oil in a pan. Add the meatballs and cook until browned on all sides. Transfer to the oven for another 13-15 minutes.

While the meatballs cook, heat the stock, ginger and curry. Season lightly with salt and pepper. Add the kale and let it simmer until the meatballs are done.

Add the meatballs and calamari to the broth and cook just until the calamari is opaque - 2-3 minutes. Ladle into a bowl and serve.
