Tamarind Miso Salmon

Serves: 1     Time: 30 minutes     Difficulty: Moderate

INGREDIENTS:

- 1 garlic clove, minced

- 1/2 tsp. chipotle powder

- 1 tsp. ginger

- dash of fish sauce

- 1 T. tamarind paste

- 1 T. miso

- 1 tsp. agave

- 1 carrot, peeled and shaved

- 2 T. cilantro, chopped

- 2 T. walnuts, chopped

- 1/2 lime, juiced

- 1 salmon filet

- salt, pepper, oil

DIRECTIONS:

Preheat the oven to 350 degrees.

Combine the first seven ingredients together in a pan with 1 tsp. of oil. Simmer for five minutes.

Place the salmon in a baking dish. Season with salt and pepper and brush on some of the sauce. Bake in the oven for 14-16 minutes, glazing the salmon every three minutes.

Toast the nuts in a dry pan until fragrant - just 2-3 minutes.

Whisk together the lime juice with 2 tsp. of olive oil. Season with salt and pepper. Toss the carrots, cilantro, and nuts in the dressing.

Plate the salmon and salad.
