Pear and parsnip Soup

Serves: 1     Time: 40 minutes     Difficulty: Moderate


- 2 small parsnips, peeled and diced

- 1/4 onion, diced

- 1 pear, peeled, cored and diced

- 1 tsp. Garam masala

- 1 tsp. turmeric

- 1- 1 1/2 c. vegetable stock

- 1 T. chopped cilantro

- 1 T. chopped roasted red pepper

- salt, pepper, oil


Heat a light layer of oil in a pot. Add the onion, season with salt, and let it soften for 4-5 minutes. Add in the Garam masala and turmeric and stir for a minute. Add the pear, parsnips and stock and season with salt and pepper. 

Let the soup simmer for 30 minutes. Puree the soup, return to the heat for a few minutes, then ladle into a bowl and garnish with the cilantro and red pepper.
