Healthy Buffalo Chicken

Well, it's Tuesday, and half the bars in America are having "wing night." So let's do it at home to make it a bit healthier, yeah?

Serves: 1     Time: 25 min.-1 hour

INGREDIENTS:

- 2 chicken tenders

- 1/4 c. of your favorite hot sauce

- 1 celery rib, sliced

- 1/2 c. sliced cucumbers

- 1/2 tsp. dried parsley

- 1 T. red wine vinegar

- 2 T. bleu cheese crumbles

- a few torn parsley leaves for garnish

- olive oil, salt, pepper

DIRECTIONS:

Marinade the chicken in the hot sauce for at least 10 minutes and up to an hour.

Heat a grill pan and drizzle or spray it with oil.

Season the chicken with pepper and cook it for 4-5 minutes per side, basting with any excess hot sauce.

Meanwhile, whisk together the vinegar and oil. Season with salt and pepper and whisk in 1 T. of the bleu cheese. Toss the cucumbers and celery in the dressing.

Plate the chicken and top with the salad. Finish with the parsley and remaining bleu cheese.
