Chicken Leftovers One

I really think I might be eating this chicken for a week.  Thank goodness for having a bunch of different ways to use it.

Chicken Salad... Salad


- One chicken breast, diced
- 1/4 large onion, chopped
- 1 celery rib, chopped
- 1/4 c. dried cherries, chopped
- 1/4 c. mayonnaise
- 2 T. dijon mustard
- Juice of 1 lemon, separated
- Salt
- Pepper
- Handful of greens
- 1/4 tomato, sliced
- drizzle of extra virgin olive oil
- scant palmful of sunflower seeds for garnish

Mix together the chicken, celery, onion, cherries, mayonnaise and dijon.  Season with salt and pepper, and add 1/2 of the lemon juice.  Plate your greens, adding the tomatoes, and dress the salad lightly with the other half of the lemon juice and olive oil.  Place the chicken salad in the center of the plate, and garnish with the sunflower seeds.
