Sunday Brunch

Just because I'm at home alone doesn't mean I can't stack up my Sunday newspapers and have a great meal.  I love lazy Sunday mornings with a nice, light meal and a cup of coffee.  Today's incarnation that has me in my PJs until noon:

Baked Eggs

Ingredients:

- 1 egg (more if you're really hungry)
- 1/4 onion, diced
- 1/4 fennel bulb, diced
- 1/4 green bell pepper, diced
- 5-6 kalamata olives
- 1/2 roma tomato, chopped- 1 roma tomato, passed through a foodmill (or use 1/4 of a 14.5-oz. can of tomato sauce)
- 1 garlic clove, minced
- salt
- pepper
- olive oil

Preheat the oven to 350 degrees.

Heat 1-2 T. of olive oil in a small skillet.  Add the onion, fennel and pepper and season with salt.  Allow to soften for 7-8 minutes.  Add the garlic and cook for a minute longer.  Add the diced tomato and tomato sauce and stir.  Simmer for 5-6 minutes.  Season with a bit of pepper and add the olives.  Stir and pour into a small baking dish or ramekin.  Crack an egg on top of the vegetable mixture and transfer to the oven for 8 minutes.

Toast a piece of bread to dip into the yolk and scoop up some of the veggies.  Now go back to bed.
